Pannukakku

Traditional Finnish Christmas breakfast custard.

4 eggs
1 Tbsp sugar
1 cup flour
dash of salt
2 cups milk
ground cinnamon

Butter 13" x 9" x 1-1/2" pan. Beat ingredients all at once with mixer on high speed, pour into pan and sprinkle with cinnamon. Bake at 425 F for 20 minutes. Reduce heat and bake at 375 F for 10 more minutes.

Serve with butter, cinnamon sugar, jam, syrup or honey.
