Upside Down Cake
1/3 cup butter
1/2 cup brown sugar
canned pineapple, peaches, maraschino cherries, pecans, etc.
Melt butter in a 10" skillet or baking dish. Sprinkle brown sugar evenly over butter. Arrange drained canned fruit in an attractive patter over butter-sugar coating.
Cake:
2 eggs
2/3 cup sugar
6 Tbsp fruit juice
1 tsp vanilla
1 cup flour
1/3 tsp baking powder
Beat eggs until thick and lemon-colored, about 5 minutes. Gradually beat in sugar. Beat in juice and vanilla. Mix in flour and baking powder. Pour over fruit. Bake at 350 F for 45 minutes.
